Oatmeal Cookie Dough Truffles

We're in full Holiday mode right now which means we've been rollin' up a storm and making the tastiest treats to share with family, friends and co-workers!

Our favorite recipe of the moment comes to us from our friend, Rachel Mansfield! She managed to combine our love of chocolate chip cookie dough and truffles. That's right, she delivered some serious Holiday magic and made some Chocolate Chip Oatmeal Cookie Truffle Bars (we know, we're drooling too).
These tasty bars are SUPER easy with only 5 ingredients. They're also vegan and gluten-free! You'll be everyone's favorite host this Holiday season when you bust these out at your next party. (That is IF you're willing to share ;)

 

INGREDIENTS


DIRECTIONS

  1. In a food processor, add the Energy Bite Mix, applesauce, dates and coconut oil
  2. Pulse until well combined and the dough is formed (it should be reasonably cookie dough and very easy to handle!)
  3. Line a baking sheet or cutting board with parchment paper and begin forming truffles with your hands and placing them on the sheet (should be about 2-3 tablespoons of dough per truffle bar)
  4. Melt the dark chocolate chips in a microwave safe bowl in 30 second increments, stirring in between 
  5. Gently dip each truffle bar into the chocolate (use a fork to hold truffle and spoon to drizzle on top)
  6. Place onto parchment paper, then repeat for remaining truffles
  7. Place in fridge to set for 30 minutes before serving

RECIPE NOTES

Makes about 20-24 truffles. Store leftover truffle bars in the fridge for 5 days or the freezer for 2 months.
